Homemade SALSA


OK, so ended up making some salsa today. I don't think we made any last year so ...we were obviously out. It is sooo good... ended up with 22 pints amongst the three of us-Auntie Carla and my mom were up to do some as well. I have enough for one more double batch that I will cook down later tonight. It took from 1 until now, 530, to do what we did. The cooking down is what takes so long. Then, of course, you have to process the jars to make a seal.

Here is the recipe we used...you can adjust the "hotness" of it by adding more jalapeno peppers.

Traditional Salsa

7 cups diced, seeded, peeled , cored tomoatoes (about 5 lbs.) I do not peel them. I do take the stems out and take the seeds out. Then I run them through the food processor to get whatever "chunkiness" you want.

6 green onions, sliced

2 jalapeno peppers, diced

4 cloves garlic, minced

2 tbs. minced cilantro

2 tsp. salt

1/2 cup vinegar, 5% acidity

2 tbs. lime juice

4 drops hot pepper sauce

**combine all ingredients (again I use the food processor to dice/mince/chop all of the ingredients) in large saucepan. Bring mixture to a boil. Reduce heat and simmer 15 minutes. (it takes longer than this to reduce the water off the salsa...it takes about 1 hour actually) Carefully ladle hot salsa into hot jars, leaving 1/4 inch head space. Wipe jar rims clean. Place lid on jar with seal next to glass. Screw band down evenly and firmly just until a point of resistance is met-fingertip tight.

Process in boiling water 15 minutes. (make sure the water is up over the jar by 1 inch)

Makes about 4 pints. (if you are lucky)

I always double the batch. It really boils down and doesn't make what is says. I did 15 pounds today for a double batch and we got 8 pints out of it. But it is SOOOO worth it. The local grocery store sold me tomatoes for 1.00 a pound since I was getting 30 pounds....and I am going to go and get 10 more pounds to do this next batch with. I will, more than likely, do another canning in August again. I love to hand the salsa , with a bag of chips of course, out as gifts. It is a huge hit!!!

I so want some!! I'm going to try and make some in a couple of weeks. We will see if it works for me, you know how I can't really cook! loL!

Oh, and is this the mild version?? Again, I'm not a spicy gal.

I will definitely have to try out this recipe...Nate LOVES salsa...I think that is why we eat mexican so often (the free chips and salsa).

You don't know me, but in my search for a salsa recipe that varied a little from mine, I found your website. I said a prayer for Tucker, and I pray many blessings on him and your family as well. I have a child with epilepsy and one who has not been diagnosed but also has seizures. With our frequent trips to the hospital I can understand the pain you must be going through to see your child sick. God is with you and little Tucker!

I was looking for a salsa recipe and came across yours. I canned the salsa last night but now am concerned it wasn't completed right. I used fresh lime juice when most suggest bottled. Most recipes call for blanching fresh tomatoes which I did not. Because I didn't have a pressure cooker or canning system I boiled the water in a stock pot. I am very concerned of the safety.

I was looking for a good salsa recipe that I plan to 'doctor' by smoking the tomatoes and peppers. This one looks like a good one to try. God bless little Tucker and especially the rest of the family. My thoughts & prayers are with you.

You mention that you can adjust the hotness by adding more peppers. All the sites that talk about food safety say not to adjust the amounts of ingredients in tested salsa recipes, but to add the same amount of hotter peppers. It has to do with the food chemistry (acidity) to ensure micro organisms don't get a suitable environment to grow.

i live in crosssville, tn. but, spent most of my life in tx.we grow our on herbs,peppers and tomoato's. i was lloking for a new salsa receipt for this growing season. as soon as own crop comesw in i will very much enjoy trying yours. prayes for your son. god bless, paula

This recipe is safe due to the vinegar and lime juice, not to mention the acidity from the tomatoes. Of course tomatoes today are not nearly as acidic as they were in my girlhood days when they would bite you back. I have canned for over forty years, and this sounds like a great salsa recipe. I don't like cilantro ok to leave out of the recipe? I am using tomatoes from our garden and I have several varieties,ok to mix? Do you youse apple cider vinegar or white?

I made a couple of huge batches of this last year, we just ran out about a month ago. I got 60 tomatoes at my CSA today plus the ones on my garden and I scoured my archives to find this recipea again, It was amazing. We couldn't go back to store bought after this recipea.

Did you have the jars covered by st least an inch of boiling water? And did you boil the recommended time? Did your jars seal? Your good if these steps took place

I like your salsa recipe. I normally chop all the ingredients by hand which is quite hard on my back and shoulders, so the idea of using our food processor sure sounds good.

Made this last year...SO GOOD! I took a jar to my office with chips, and people offered to buy it for $5.00/pint!!!
CRAZY! I'd rather give it away, and see people smile!
Mine was a little watery because of the tomatoes I used, which were exceptionally juicy. Just drained some juice before transferring to a serving bowl..no problem.

I'm a parsley person, not cilantro, so I did cut down a bit on the cilantro (just a little), and it was yummy! Also made it kind of a medium hot in adjusting the jalapenos.

Wonderful recipe which I just sent to my dear daughter-in-law who is a Tex-Mex perfectionist. (She's from Texas), and I'm anxious to hear her opinion!

This is absolutely, the best Salsa recipe!! I have been making the Bryant family Homemade Salsa since I first discovered this webpage in 2016. My family raves over this, and they fight over the last jar, every year!
